Ingredients
  

  • 8 ounces of Macaroni Noodles of your choice
  • 3/4 cup Milk
  • 1 tbsp. of Butter
  • 1/4 tbsp. of Onion Powder
  • 1/8 tbsp. of Garlic Powder
  • 6 drops of Liquid Smoke Flavor
  • 1/2 - 1 tbsp. Dijon Mustard to taste
  • 1/4 tbsp. Salt or to taste
  • 1 bay leaf
  • 2 large Egg Yolks
  • 1/2 cup of Evaporated Milk
  • 4 ounces grated Cheddar Cheese
  • 3 ounces grated Monterey Jack Cheese
  • Freshly cracked Black or Cayenne Pepper for garnish

Instructions
 

  • Prepare the pasta as instructed on the box. Drain and set aside.
  • Melt the butter in a medium-sized heavy saucepan and combine it with milk, onion, garlic powder, and salt. Add in one bay leaf, Dijon mustard, and liquid smoke. Mix well, cook for about 5 minutes and remove the bay leaf.
  • Continue cooking while stirring over medium-high heat and scald. Remove the saucepan from heat.
  • In a mixing bowl, combine the ½ cup evaporated milk and the egg yolks. Whisk well to mix.
  • Add ¼ cup of the hot and scalded milk mixture to the egg yolks and whisk to mix. Pour into a saucepan.
  • Put the mixture back to cook over medium-low heat. Stir regularly and keep cooking until the mixture coats the back of your wooden cooking spoon, usually for about 3 minutes.
  • Add your cheese and the drained pasta to the sauce mixture and continue cooking on low heat. Mix gently with a rubber spatula until the cheese melts.
  • Remove from heat and serve hot as desired. You can sprinkle it with black pepper or cayenne pepper to garnish.

Pro Tips

 
  1. Note that this is not a low-fat recipe so use real butter, heavy cream, and whole milk.
  2. Use a heavy and large skillet to avoid burning while still having a large hot surface for mixing the ingredients.
  3. Ensure the oil and pan are hot before adding the macaroni and cheese. This helps avoid burning and sticking.
  4. Stir regularly but stop every few seconds to give the dish time to brown. Be careful not to burn when browning.
  5.  For a delicious taste, cook until about 15-20% of the dish browns.
  6.  Go for the best quality ingredients as they yield the best results.
